For any chocoholic out there, ganache is a heavenly combination of chocolate and cream that can be used to crumb coat a cake. It can be flavoured to go with all kinds of cake…or just eaten on ice cream if you prefer!
We were kindly given a Thermomix as a wedding present and it is absolutely great at making ganache. If you don’t have one, don’t worry! You can still make delicious chocolate ganache by heating the cream first, pouring it over chopped chocolate and stirring until combined.
- 300ml cream
- 900g white chocolate
- vanilla bean paste
Weight out the cream and chocolate. You can use double or whipping cream, both work.
Set the Thermomix for 5 minutes at 55 degrees and turn on to 2.5 speed.
Voila! White chocolate ganache. Now it’s time to add flavouring (if you want), personally I like to add vanilla bean paste to white chocolate ganache as it mellows the flavour and somehow makes it less sweet.
Set the Thermomix for 30 seconds on 2.5 speed to combine the vanilla bean.
Pour your white chocolate ganache into a bowl and cover with cling film pressed to the surface. Leave to set to a nutella consistency – spreadable but not too runny! Then it’s ready to use for crumb coating your cake.
