Easiest Pancake Recipe

It’s pancake day today, and along with many others we have indulged in a treat of pancakes for lunch. I’m sorry to say we wolfed them down too quickly for me to snap many pictures, but I thought I’d share the pancake recipe we always use. No need for a packet mix, especially as it only takes three ingredients to make these delicious pancakes! All you need to decide on now is what fillings to have…

Ingredients:

100g plain flouur

300ml milk

2 eggs

Butter for the pan

Method:
  1. Put the flour, eggs and milk in a bowl and whisk together
  2. Heat a pancake pan (or saucepan) on a medium heat, pop a little butter on to melt and help the pancakes from sticking and turn the oven on low (50 – 80 degrees depending on how low your oven will go)
  3. Use a ladle to spoon on the pancake mixture, quickly rotate the pan to spread the mixture out evenly and bake for 1 minute
  4. Toss the pancake and bake for 30 seconds then pop on a plate in the oven while you cook the rest.

 

This mixture makes approximately 10 – 12 pancakes depending on how big your pancake pan is and how thick  you like your pancakes!

We had ours drenched in lemon juice and sugar today but there are loads of fillings you could try :

Sweet pancakes:
  • Nutella and banana
  • Icecream
  • Jam and creme fraiche
  • Baked apples and cream
  • Mango and honey
Savoury pancakes:
  • Butternut squash and stilton
  • Mushroom and cheese
  • Ham and cheese
  • Duck and hoisin sauce
  • Asparagus and smoked salmon
